Peter has an extensive history with restaurant pubs and private school cooking. When not cooking he is riding his mountain bike(s)!!!
Peter has spent his entire life on the west coast of BC enjoying nature through mountain biking, camping, hiking and foraging for wild edibles.
During the summer, with the bounty of the ocean at his fingertips, Peter dove into the KBH meal situation with vigour. While respecting our long history of family style meals he started augmenting and inventing. Our KBH Oikawa style Icura (Japanese cured salmon eggs) got turned into an hors d’ouvre to die for.
A few other Peter dishes were his bacon jam appetizer, salmon with bearnaise sauce, aranchini, steak with prawn truffle oil, prawn bisque and a whole lot more.



I am super stoked to be back cooking for another season at KBH. I am continuing on with my menu from last year featuring fresh fish, amazing 2 Rivers Meats featuring my red wine & blueberry braised Bison.
Looking forward to seeing familiar faces and new guests this year!!
