Beach House chef Peter Finch !

We now have the pleasure of working with chef Peter Finch. He has come to us with an abundance of fantastic new recipes, one of our new favourites being salmon poke! Now were sure you’ve heard of tuna poke but this is chef Peter fantastic twist on the classic dish.

what you’ll need:                                                                            2 pound pack frozen salmon (tail piece)
remove the skin and bones
2 tbsp sesame oil
2 tbsp soy sauce
1 tsp garlic
2 green onions
1 tbs sesame seeds
1 piece of ginger (1 inch/ 2 inch) grated
1/2  tsp salt
2 limes, juiced

Directions:
Combine the sesame oil, soy sauce, garlic, green onions, sesame seeds, ginger, salt and lime juice; set aside. Start with your 2 pound piece of salmon, it should be half frozen (for health reasons it should be frozen prior to preparation). Dice the salmon into small cubes, then mix it into the marinade, let it sit in the bowl for 5 hours.

Garnish this perfect summer dish with cucumber and avocado and enjoy!
