Bacon Jam Recipe

8 ounces good quality thick cut bacon diced fine
1 red onion diced fine
1 cup brewed coffee
1 cup balsamic vinegar
1cup brown augar
Fresh cracked pepper
Optional maple syrup to finish

Cook bacon and red onion on MEd heat until bacon is crisp drain in colander until all fat is drained put back on MEd heat and add rest ingredients and reduce until syrupy and thick finish with optional maple syrup or even some whiskey or rum

Serving Suggestions

On crispy bread rounds with blue or cambozola cheese

Or

put on cooked steak or chicken breast with blue or cambozola cheese
